Blueberry Beet Smoothie

This refreshing and detoxifying smoothie is full of anti-inflammatory ingredients - beets, blueberries, ginger and cinnamon. 

A beet might not be your first thought as a smoothie ingredient but then again a few years ago kale might not have been on your morning drink radar either ;-)

The Beet - a beautiful, grounding, antioxidant rich root veggie. It's unique mix of antioxidants help reduce unwanted inflammation and assist with your natural detoxification process. 

As healthy as they are, beets can be somewhat time consuming to add into your day. You usually have to roast them, boil them or shred them to make them truly edible. 

Lovebeets

As you know I'm all about healthy eating done simple and quick, so I keep a package of 'Love Beets' in my fridge. These are available at most grocery stores, usually in the prepared produce section and at Costco. They are already cooked and, unlike pickled beets have no added sugar. They are super easy to slice up and add to salads, veggie dishes, soup and...smoothies! 

If you don't have these pre-cooked beets, you can still enjoy this delicious smoothie. Check out the 'Tips & Nutrition' below for details on how to incorporate a raw beet.

Ingredients

makes 1 large smoothie

  • 1 cup water
  • 1 beet - either raw and chopped or shredded or a cooked 'Love Beet' (see note above)
  • 2 Tbsp hemp seeds
  • 1/4 tsp cinnamon
  • 1/2" piece of fresh ginger
  • 1 banana, chopped and frozen
  • 3/4 cup frozen bluberries


Tips & Nutrition

A raw beet can be difficult to blend (see the note above about about Love Beets). If you are using a raw beet and  you have a high speed blender like a Blendtec or Vitamix you should be ok as long as you chop it into smaller pieces. 

If your blender is a little less powerful you can simply shred or spirialize your beet (you can do this the night before to save time in the morning) for easier blending. 

You can use 1/2 a ripe avocado in place of the banana but it will be less sweet and more "beety".

Up the protein in this smoothie by adding your favourite plant based protein powder.

Method

Place all ingredients in a high speed blender in the order they are in above and blend until smooth and creamy!
