Spring Radish Salad

Our bodies naturally crave lighter foods in the spring to balance out the hot, heavy food we enjoy in the winter. 

This makes it a perfect time for a 'spring cleaning' salad!

This one includes...

  • radishes which promote liver cleansing 
  • naturally detoxifying kale
  • orange for plant based calcium (and a little sweetness)
  • black beans for clean protein 
  • walnuts for healthy fats that help you better absorb the nutrients and vitamins from the veggies 

It has a light, lemony dressing and makes a beautiful lunch or dinner. I love it paired with avocado toast.

Ingredients

Serves Around 4

  • 4 cups baby kale, lightly packed
  • 1 orange, peeled and cut into bite size pieces
  • 1/4 red onion, chopped
  • 1 cup black beans, rinsed and drained
  • 6 radishes, thinly sliced
  • 4 Tbsp walnuts, roughly chopped

Dressing Ingredients

  • 1/4 cup olive oil
  • 2 Tbsp lemon juice
  • 2 Tbsp apple cider vinegar
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • fresh ground salt & pepper

Tips & Nutrition

This salad can be served on its own as a meal due to the plant based protein and healthy fats in the black beans and walnuts. You can also add hemp seeds or sunflower seeds to up the protein. 

It also makes a beautiful side dish to a Whole Roasted Cauliflower or Black Bean Burger

You can prep this salad ahead of time minus the orange, walnuts and dressing. 

Method

Whisk together all the dressing ingredients or shake them up in a mason jar with a tight fitting lid. 

Combine all ingredients in a bowl, lightly drizzle on the dressing you made in the previous step and gently mix until the salad is well dressed. 

Serve immediately.
