I love a good french fry...
I mean...who doesn't ;-)
These Baked Sweet Potato Fries do a great job satisfying my cravings and they are much healthier than a restaurant option which are usually deep fried.
Sweet potatoes are so healthy - full of vitamin A which is amazing for your skin and lots of antioxidants to keep your immune system in good shape.
This recipe is easy to make and is a great appetizer, snack or pairs beautifully with Black Bean Burgers.
You can add any seasoning you like when you are mixing the potatoes with the olive oil - paprika, turmeric, rosemary or a dash of cayenne pepper. Mix and match to your tastebuds!
You can make this recipe for as many people as you like - estimate 1 potato per person.
Preheat the oven to 400 and line a baking sheet with parchment paper.
Cut the potatoes into 1/4" slices and then cut those slices into strips to make "fries". In a large mixing bowl toss the fries with olive oil, garlic powder and lots of salt and pepper until they are well coated.
Arrange the fries in a single layer without overcrowding on the lined baking sheet and cook in the oven for 15 minutes. Flip them with a spatula and cook for about another 15 minutes. You will be able to tell when they are done because they will be a bit puffed up and golden brown.
