These beautiful, healthy, light cucumber rolls make a great snack or appetizer - hello dinner party or summer bbq!

Cucumber is so refreshing and hydrating - perfect in the spring and summer months. Easily filled with creamy hummus and crunchy seeds, these rolls make healthy eating fun and delicious!

Seeds are such a simple way to add some protein, iron and healthy fats to any meal - sprinkle them on salads, bowls, veggies, potatoes, oatmeal, avocado toast, fruit...the list goes on. Most of them have a light taste that doesn't interfere with the flavour of your food and take little or no preparation.

Hemp seeds and sunflower seeds are full of magnesium - which is needed by literally every organ in your body and is difficult to get from most foods. It contributes to the health of teeth and bones and muscles, aids with healthy sleep and helps regulate levels of important nutrients. Feel free to pick any flavour of hummus you like and you can even switch out the seeds to ones you prefer or have on hand. The options are endless...let me know what hummus seed combo you love in the comments below!

Ingredients

makes about 8 rolls

  • 1 large english cucumber
  • 1/2 cup hummus
  • 2 Tbsp hemp seeds
  • 2 Tbsp sunflower seeds
  • fresh ground sea salt & pepper
  • 1/2 tsp paprika

Tips & Nutrition

You might want to have an extra cucumber handy as some slices may break or be too thin or small for the rolls. 

You won't use all of the cucumber - the best slices will be the ones in the middle. You can use the thinner slices or broken pieces to make an easy cucumber ribbon salad - top with a little lemon juice, olive oil and salt and pepper. You can also chop up the remaining cucumber for salad or snacks.

Method

Lay a large piece of parchment paper on your counter (the same height as the cucumber).

Use a sharp peeler to begin slicing the cucumber length wise to make long ribbons. 

Choose your 8 best (these will be from the middle of the cucumber) and lay them out on the parchment paper. 

Spread the hummus evenly on each slice. Make sure to get the hummus to the very ends so they roll up well. Sprinkle the hemp and sunflower seeds on top of the hummus on each slice and top with a little sea salt and pepper. 

Roll up each slice slowly and place them standing up on a plate. Once you have them all rolled and standing, sprinkle the tops with paprika.
