Zesty Zucchini Carrot Bars


Veggies for dessert? Yes Please!

These delicious squares are a great way to get more veggeis in your day and they totally feel like a treat. Eggs are replaced by a "flax egg" - ground flax seeds mixed with water to create a similar consisteancy to eggs and providing some awesome omegas and fibre. 



  • 2 tbsp ground flax
  • 6 tbsp water
  • 1½ cups brown rice flour
  • 1 tsp aluminum-free baking powder
  • 1/2 tsp ground ginger
  • 3 medium carrots, washed, peeled and shredded
  • 1 cup zucchini washed and shredded (approx 3/4 med zucchini)
  • 1/2 cup coconut sugar
  • 1/2 cup vegan chocolate chips
  • 1/4 cup hemp seeds
  • 1/2 cup apple sauce (unsweetened)
  • 1 tsp vanilla extract
  • Dusting of confectioners sugar (optional)

These yummy squares contain protein and omegas from the flax and hemp seeds, vitamins from the carrtos and zucchini, are low in sugar and oil free. Perfect dessert, healthy snack or even as a to-go breakfast. Store them in an airtight container in the fridge for up to 4 days.  


Preheat your oven to 350°F.

Make 2 flax "eggs" - in a small bowl whisk together the flax and water until well combined. Place in the fridge for 15 miutes to set. 
Line a 9"x9"x2" baking pan with parchment paper so that it sticks up all of the sides an inch or so. 
In a large bowl stir together flour, baking soda and ginger, set aside.  
In a medium bowl combine carrots (hand grated carrots work best - pre shreded ones from the store are too heavy), zucchini, coconut sugar, chocolate chips, hemp seeds, apple sauce, vanilla and the flax "eggs". Add this mixture to the flour mixture, stirring just until combined. Spread batter in pan - you may need to wet your hands and flatten it out in the pan as it will be a bit sticky.
Bake for 25 minutes and cool completely in pan on a wire rack. Cut into squares and dust with confectioners sugar if desired. 
Makes 16 squares. or 32 "bites".
