A steamy cup of green tea on a hot, sunny, summer day probably isn't that appealing to you...
So let's change things up!
You can still get your disease fighting, antioxidant rich green tea, but in a refreshing 'summer drink' kind of way with this Sparkling Green Mint Iced Tea.
Its a great way to cool off, drink healthy and stay hydrated. Plus the mint is amazing for digestion and reducing inflammation.
Simple, refreshing and delicious...
For a personal sized option, you can make a big pot of the iced green tea and keep it in the fridge for a few days and simply add sparkling water and mint to it as you drink it instead of making one big batch.
Cucumber, lemon or raspberries also make a beautiful and delicious addition to this drink.
Boil 3 cups of flat water in a kettle. Once boiled, let it sit for 2 minutes (boiling water will burn green tea reducing its awesome antioxidant power).
Add the tea bags (or loose leaf tea in a tea strainer/infuser) to a heat proof pitcher and pour in the hot water. Let steep for a few minutes.
Add in 4 cups of cold sparkling water, 2 cups of ice cubes and the handful of mint leaves. Place in the fridge for 20 minutes.
Strain the mint leaves (or leave them in if you like) and serve. Option to garnish with a mint sprig.
