Kale and White Bean Soup


A cozy, hearty soup to warm you up and fill you up with the energy you need! 

Its full of naturally detoxifying greens, protein rich beans and sweet potatoes to keep your skin glowing. 



serves 4

  • 2 Tbsp olive oil
  • 1/2 large white onion, chopped
  • 1 tsp garlic powder
  •  fresh ground sea salt and pepper
  • 1 clove garlic, chopped
  • 1 tsp dried rosemary
  • 1 medium sweet potato, scrubbed and cut into bite size pieces
  • 4 cups vegetable broth (1 tetra box)
  • 1 Tbsp apple cider vinegar
  • 3 cups water
  • 1 bay leaf
  • 2 (15oz) cans of navy or cannellini beans, rinsed and drained
  • 2 cups kale, torn (about 8 large leaves)

Tips & Nutrition

Feel free to sub in or add any greens you like - spinach, chard or even bok choy. You can also add in any other veggies you like. 

I like to enjoy this with Mary's Gone Crackers and hummus or avocado and sprinkle the soup with a dash of nutritional yeast.  

You can easily make a double batch and freeze it in individual portions so you always have a healthy dinner ready  to go. #noexcuses


In a large soup pot, sauté the chopped onion and garlic powder in olive oil on medium low heat until the onion is tender. Sprinkle with plenty of fresh ground sea salt and pepper and add in the garlic clove, dried rosemary and sweet potato. Stir well and cook for 5 minutes to bring out the garlic and rosemary flavour. 

Add the vegetable broth, apple cider vinegar, water, the bay leaf and the beans. Bring to a boil and then let simmer for 30 minutes. Add in the kale and cook for an additional 10 minutes.
