I love it served with a little coconut yogurt and hemp seeds.
Sub or add in any nuts or seeds you like or have on hand. Pumpkin seeds are also nice sprinkled on top.
Keep in an airtight container for up to 3 days or freeze in individual portions for longer.
Preheat oven to 350ºF. Grease a 8x8 baking pan with a little coconut or olive oil.
Add all ingredients except the walnuts to a mixing bowl and stir until thoroughly combined.
Transfer to baking pan, top with walnuts and bake for about 45 minutes or until a toothpick comes out clean. Sprinkle with a little fresh cinnamon before serving.
