Baked Apple Pie Oatmeal


Baking oatmeal is a super simple way to make it - prep it in one bowl, pop it in the oven for 45 minutes and boom, you've got a healthy, protein rich breakfast. 

Perfect for feeding the whole family or to meal prep on the weekend so you have a healthy breakfast ready for those crazy, busy weekday mornings. Simply cut it up into individual size pieces and store them in the fridge so you can grab and go! 

I love it served with a little coconut yogurt and hemp seeds. 



  • 2 cups apples, peeled & chopped (about 2 medium size apples)
  • 2 cups oats
  • 2 cups unsweetened almond milk
  • 1/2 cup unsweetened apple sauce
  • 2 Tbsp pure maple syrup
  • 2 tsp cinnamon
  • 1/2 cup chopped walnuts

Tips & Nutrition

Sub or add in any nuts or seeds you like or have on hand. Pumpkin seeds are also nice sprinkled on top. 

Keep in an airtight container for up to 3 days or freeze in individual portions for longer. 


Preheat oven to 350ºF. Grease a 8x8 baking pan with a little coconut or olive oil.

Add all ingredients except the walnuts to a mixing bowl and stir until thoroughly combined.

Transfer to baking pan, top with walnuts and bake for about 45 minutes or until a toothpick comes out clean. Sprinkle with a little fresh cinnamon before serving.
