In a kettle, boil your water and then let it rest for one minute. Pour 3/4 cup of water into your favourite mug and add the peppermint extract.
Whisk in the matcha powder. Use a bamboo matcha whisk (if you don't have one, a mini wire whisk or a fork will work) until the matcha is well dissolved.
Warm the plant based milk on medium heat in a small saucepan on the stove until it is just starting to bubble. (Or use an electric frother if you have one.) Add the hot milk to your mug.
Stir in the maple syrup or honey to sweeten if desired.
