Summer Pasta Salad


To me, a pasta salad brings to mind all the feelings of summer...eating outside, bbq's with friends and family, messy hair, shorts, tee shirts and flip flops. The equivalent of summer comfort food.

This dish was always a staple in any summer get togethers growing up - today I have changed it up a bit and added more veggies, healthy apple cider vinegar and chosen a gluten free brown rice pasta. 

Feel free to make it your own by adding different veggies you like or have on hand (zucchini is also quite good) or make it a meal by adding beans or some seeds for extra protein. 



  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 Tbsp dijon mustard
  • 1 tsp garlic powder 
  • fresh ground sea salt & pepper
  • 1 package (about 250 of brown rice pasta, cooked al dente, drained and cooled to room temperature
  • 1 yellow bell pepper, chopped
  • 1/2 red onion, chopped
  • 5" long piece of english cucumber, halved and sliced
  • 1 cup cherry tomatoes, halved

Tips & Nutrition

You can use any type of pasta you like - some of my favs include lentil pasta, chickpea pasta and even black bean pasta. Look for them at health food stores or even in some grocery stores. 

You can add protein to this by adding chickpeas or hemp seeds. You can also add or substitute any veggies you have on hand. You can also add any fresh herbs for a different taste.


In a medium bowl whisk together the olive oil, vinegar, mustard, garlic powder, sea salt and pepper. 

In a large bowl combine the pasta, veggies and dress with the dressing from the first step. Chill (if desired) and serve.
